Ros Omelette, as the name suggests ‘ros’ meaning gravy in Konkani (the official language of Goa), is a type of omelette dipped in generally a chicken gravy. This is the typical street food of Goa, wholly worth the hype and taste. However, if you step out to discover various other types of omelettes and their recipes originating from all around the world, you will find a difference in the methodology with which it's prepared. But an omelette dipped in gravy, Isn't that quite surprising? Ross omelette is doused in chicken gravy or a vegetarian gravy of masala served with a garnish of coriander, onion and sprinkled pepper. Being a Goan snack or dish, the sauce is made in the famous masala of Goa ‘Xacuti’, an amalgamation of local spices, herbs, coconuts, and chillies. Once the omelette is prepared, the ros is prepared separately and served with Goan bread such as ‘poee’.
