- 1 teaspoon Ghee
- ¼ tablespoon Cumin / Jeera
- 2 cloves Garlic
- 4-5 Curry Leaves
- 4 Eggs
- Black Pepper/ Chilli Flakes (Optional)
Method:
- For making this recipe, you will have to soak the Black Grams, Moth Beans and Green grams overnight or for at least 2 hours.
- In a pressure cooker, add two cups of water and cook the Black grams until they turn soft. It will take at least four whistles of the pressure cooker.
- For the Moth beans and Green Grams, take a separate utensil and boil around two cups of water in it. Boil the beans for 5-10 minutes till they are soft. Add a pinch of salt to the boiled water. Cook it for half an hour
- Make sure to touch the beans and check whether they are properly cooked or not. The grams should be mushy on being crushed.
- In a separate bowl, crack four whole eggs. Add ¼ tablespoon Garam Masala, Red Chilli Powder and Turmeric and whisk.
- Make sure to whisk for at least two-three minutes, till you can see foam developing. This will make the Omelette fluffy.
- In a separate saucepan, add your black grams, green grams and moth beans along with stir. Now, add a teaspoon of Ghee and mix again.
- Make some empty space in the pan. Put ¼ tablespoon of Cumin in it and add 1 teaspoon of Ghee on the top of the cumin. Let it rest for a minute and mix it with the daal. Stir for two minutes.
- Add chopped garlic and curry leaves in the pan and stir.
- Pour the beaten egg mix in the pan. Let it cook. Push the green beans in the middle and let the egg mixture cover the sides and cook.
