Our Own Butter Board Has An Achari Twist. Find Out

Most amazing time of the year is here, and we can’t be more excited. This festival brings a lot of joy along with indulgence in some delicious food. I personally look forward to organizing Diwali parties at my home. This puts me under a lot of pressure to set up a perfect festive menu for my guests. But this year, my menu is sorted, and it is because of the one trending fusion dish that stole my heart. Do you know what we are talking about? Aachari Tandoori Paneer Board! Sounds amazing, isn’t it?

Butter board trend took the internet by storm. After the trend went viral, we saw so many folks slathering gobs of butter on cutting boards and dumping sauces, spices, fruits, and other stuff on top of the butter. A few days ago, Chef Saransh Goila took to Instagram and shared the recipe of Chaat Board. And now, this trend has got a notch higher. 

Chef Anahita Dhondy Bhandari’s Instagram page is no less than a foodie inspiration. This time, she has shared the butter board with a desi twist, and we are finding it perfect for the Diwali party. Chef Anahita shared a post and wrote “Going all desi with the trending butter board, this tandoori board will fulfil all your tandoori platter cravings aesthetically. The flavours are going to blow your mind, and you’ll be surprised to see how easy this is.” Aren’t you excited? Ingredients

For Tandoori Marination

  • ½ green capsicum
  • ½ bell pepper 
  • 4 to 5 madras onions or pickled onions 
  • ½ packet paneer (chopped small cubes)
  • ½ cup hung curd 
  • ½ tsp red chilli powder 
  • ½ tsp haldi powder 
  • ½ tsp cumin powder 
  • ½ tsp coriander powder 
  • 1 tsp mustard oil 
  • Salt to taste

For Coriander Spread

  • ½ fresh coriander leaves 
  • 2 tbsp hung curd 
  • 2 tbsp paneer 
  • 4 tbsp cream cheese 

Aachari Spread

  • 125 gm paneer 
  • 2 tsp mango pickle ( with mango pieces, masala and oil )
  • 1 tsp red chilli 
  • 1 tsp mustard oil 
  • Salt to taste
  • Naan, Tandoori Roti or any bread of your choice.

Method 

  • For tandoori marination, in a bowl with hung curd, whisk all other spices and mix well, divide this marination into two and add your paneer in one and the vegetables in one and keep it aside.
  • While this marinates, blend together fresh coriander leaves, hung curd and cream cheese to a nice spread.
  • For the achaari spread, crumble the paneer and blend everything together nicely.
  • Grill the marinated paneer and vegetables till you get a nice char.
  • Now to arrange everything, take a wooden board or any platter of your choice, spread the achari and the coriander spread one by one like shown in the video, top it up with grilled paneer and vegetables, scoop this and enjoy with warm bread and mint chutney and laccha pyaaz.

Some Chef’s Tips –

  • Make this with your favourite Tandoori Chicken! 
  • And if you’d like to turn your naan or roti into crispy chips, you can put them in the air fryer for 5 mins.
  • Grill the paneer and vegetables separately so the paneer stays in shape. You can give any flavour to your spreads.
