MasterChef Pankaj Bhadouria Shares High-Protein Snack Recipes

Snacking is usually considered to be unhealthy. But it doesn’t have to be. Whether you’re looking for a mid-meal munchie or a late-night snack, instead of reaching out for a bag of chips, you can choose high-protein snacks.

While you might have tried all the paneer rolls, Slurrp interviewed MasterChef Pankaj Bhadouria to get her signature recipes that are not only easy to make but also rich in protein. Badami Chandni Kebab

Ingredients:

  • 200 g hung curd
  • 200 g paneer
  • 100 g almond paste
  • 25 g roasted chana powder
  • 2 slices white bread
  • 1 tsp white pepper powder
  • ¼ tsp mace powder
  • 1 tsp cardamom powder
  • 1 tsp chopped coriander
  • 1 tsp chopped green chilies
  • 1 tsp kewra water
  • 2 tbsp chopped dried apricots (soaked)
  • 25 g corn flour
  • Flour to dust
  • Oil to shallow fry
  • Almonds to garnish

To serve with:

  • Green chutney
  • Onion laccha

Instructions:

  1. Mash the paneer till soft like dough.
  2. Mix all the ingredients, including almond paste, for the kebab.
  3. You may add 1-2 tsp of roasted gram flour if the mixture is too gooey.
  4. Dust the patty in flour from all sides and shape it into a round patty. Place an almond on top and press lightly.
  5. Heat oil in a pan and add the patties to medium-hot oil.
  6. Cook till light golden. Carefully flip over and cook on the other side.
  7. Serve hot with mint chutney.

Almond Soya Kathi Roll

Ingredients:

  • 1 cup chopped toasted almonds
  • 1 cup Soya granules, (boiled in 4 cups water with 1 tbsp light soya sauce, 1 tbsp ginger garlic paste, drained and squeezed)
  • ½ cup boiled mashed potatoes
  • 1 tbsp ginger garlic paste
  • 3 tbsp corn flour
  • 3 tbsp fresh breadcrumbs
  • 2 tbsp chopped mint leaves
  • 2 tbsp chopped coriander leaves
  • 1 tsp soya sauce
  • 1 tsp chopped green chillies
  • 2 tsp lemon juice
  • 1 tsp chat masala
  • 2 tsp roasted jeera powder
  • 1 tbsp garam masala
  • 1 tsp pepper powder
  • 1 tbsp amchur dry mango powder
  • 1/2 tbsp clove + cardamom powder
  • 1 tsp red chilli powder
  • Salt or to taste
  • 6 parathas for kathi roll
  • Green chutney
  • Onion laccha

Instructions:

  1. Blitz the boiled soya chunks in a mixer grinder until they form a coarse paste.
  2. Add in the chopped toasted almonds and the remaining ingredients and mix thoroughly to prepare the kebab mixture.
  3. Shape the mixture into kebabs, moulding them evenly over skewers. Grill on a grill pan until the kebabs are cooked through and have a golden, slightly charred finish.
  4. Take a fresh paratha and spread a generous layer of chutney over it. Place the prepared kebab in the centre, roll it tightly, and secure with a toothpick to hold it in place. Your Almond Soya Kathi Roll is ready.
  5. Serve immediately while warm, and enjoy the flavourful, smoky goodness!

Badami Mushroom Galaouti Kebab

Ingredients:

  • 400g mushrooms (boiled)
  • ½ cup almonds
  • 1 cup fried onions
  • Salt to taste
  • 1 tsp red chilli powder
  • ½ tsp garam masala powder
  • ½ tsp cardamom powder
  • 1 tbsp coriander seeds
  • ½ tsp fennel seeds
  • ½ tsp cumin seeds
  • ½ tsp kewra water
  • 3 tbsp roasted besan
  • 3 tbsp desi ghee
  • Green chutney & laccha onions to serve

Instructions:

  1. Blitz boiled mushrooms to a paste.
  2. Lightly roast the coriander seeds, fennel seeds & cumin seeds and, grind to a fine powder and sift the powder.
  3. Lightly toast the almonds in 1 tsp ghee till golden. Drain and grind to a smooth paste with the brown onions and 1 tbsp water.
  4. Mix in all the other ingredients and shape into kebabs. Cook the kebabs in desi ghee till crisp on both sides and serve with green chutney & laccha onions.
