Hyderabadi Biryani Recipe:

Ingredients:

  • 2 cups basmati rice
  • 500 grams chicken or mutton, cut into pieces
  • 1 cup plain yoghourt
  • 2 large onions, thinly sliced
  • 4 tablespoons ghee or vegetable oil
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon biryani masala powder
  • 1 teaspoon garam masala powder
  •  ½  cup chopped mint leaves
  • ½  cup chopped coriander leaves
  • A pinch of saffron strands, soaked in 2 tablespoons of warm milk
  • Salt to taste
  • Water for boiling rice

Method:

For the Rice:

  • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  • In a large pot, bring water to a boil. Add salt to the boiling water. Add the soaked and drained rice to the boiling water and cook until it is 70-80% cooked (al dente). Drain the rice and set aside.

For the Biryani:

  • Heat ghee or oil in a large, deep pan over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the fried onions and set them aside for garnishing.
  • In the same pan, add ginger-garlic paste and green chilies. Sauté for a minute until fragrant.
  • Add the chicken or mutton pieces to the pan and cook until they are browned on all sides.
  • Reduce the heat to low. Add yoghurt, turmeric powder, red chilli powder, biryani masala powder, garam masala powder, mint leaves, coriander leaves, and salt. Mix well to coat the meat evenly with the spices and yoghurt. Cover and cook for about 20 minutes until the meat is tender and cooked through.
  • Layer the partially cooked rice evenly over the meat mixture in the pan. Drizzle the saffron-infused milk over the rice. Sprinkle some of the reserved fried onions on top.
  • Cover the pan tightly with a lid and cook on low heat for 20-25 minutes to allow the flavours to meld together. This process is called "dum" cooking.
  • Once done, remove the pan from heat and let it rest for 5-10 minutes.
  • Gently fluff the rice and meat layers together before serving. Garnish with the remaining fried onions.
  • Serve the Hyderabadi Biryani hot with raita, salan, or a refreshing salad.
