Ingredients:
- 2 medium-size ridge gourd (peeled and cut into medium cubes)
- Handful basmati rice (socked)
- 2 tbsp oil
- 7-8 strings of dill leaves (soya patti)
- 4 dried red chillies
- 2 tbsp garlic (chopped)
- 1 medium-sized onion (chopped)
- 500 ml Vegetable stock
- 1 medium-sized potato (peeled and cut into medium size)
- 1 cup pumpkin (cubed)
- 1 cup milk
- 1 tsp black pepper (crushed)
- 2 tbsp freshly chopped coriander leaves
- 1 lemon
- Salt, per taste
- Butter and cream for garnishing

How to make turai rice soup?
- Take a non-stick pan, heat some butter and oil, add chopped dill leaves and saute them for 10-15 seconds.
- Then add red chillies and saute for 15-20 minutes.
- Add garlic and onion, continuously stir them till it turns translucent.
- Add chopped vegetables, potato, red pumpkin, ridge gourd, crushed black peppercorns, salt, and mix them well.
- Once it is semi-cooked, transfer them into a blender, and blend till you get a smooth thick paste.
- In the pan, heat a little oil, add vegetable stock and a handful of soaked rice. Cook them until the rice is 70% cooked.
- Add thick paste of ridge gourd with milk and 1 glass of water.
- Once it is done, mash them with the help of a steel or wooden masher.
- Add chopped coriander leaves and lemon juice. Mix well.
Transfer soup to bowl, garnish it with cream and butter. Serve hot.
