We all love grilled delicacies for their charred texture, delicious flavours and crunch. While there are various foods that can be used to make grilled dishes, gobi is one such veggie that works best as a snack and a starter.
Gobi or cauliflower is a vegetable that offers an array of nutrients such as protein, fibre, omega 3 fatty acids and vitamins. This vegetable provides its patrons with a number of health benefits such as improving heart health, boosting liver function and management weight.
So, now that we know gobi is a great choice for a healthy and nutritious snack, how about we jump straight to the recipe?
Ingredients you will need
- 1 medium size gobi
- 2 cups yogurt
- ½ tbsp ginger and garlic paste
- ½ or 1 tsp red chili powder
- ½ or 1 tsp garam masala powder
- ½ tsp turmeric powder
- 1 tsp coriander powder (ground coriander)
- 1 tsp chaat masala
- ½ tsp ajwain (carom seeds)
- 1 tsp kasoori methi (dry fenugreek leaves)
- 2 tbsp besan (gram flour)
- 1 or 2 tsp lemon juice
- 1 tbsp oil
- Black salt or rock salt as required
Preparation
Marination
Step 1: Use a muslin cotton cloth or cheesecloth to prepare hung curd, allowing the whey to get drained.
Step 2: Rinse and chop the gobi into medium size florets. It is important to keep all florets of the same size, as it helps in grilling evenly. Then, boil water with a pinch of salt and add the chopped gobi in it to simmer for three to five minutes.
Step 3: Drain the chopped gobi and mix it with hung curd, ginger and garlic paste, red chilli powder, garam masala powder, turmeric powder, coriander powder, lemon juice, ajwain, kasoori methi and besan.
Step 4: Marinate the ingredients for an hour and keep it in the refrigerator.
Grilling
Step 1: Preheat the oven to 200 degrees celsius. Brush the marinated gobi with oil and place it on the grill rack.
Step 2: Grill for 25-30 minutes and check if the florets have turned brown.
Step 3: Remember to remove the tray and turn over the florets after10 minutes of grilling.
Step 4: Once grilled, remove from the tray and arrange the grilled gobi on a platter and sprinkle some chaat masala before serving.
For some extra zing, squeeze some lemon juice over the grilled gobi and serve it with mint chutney. The same set of ingredients can also be baked as long as gobi is cooked well in advance. This recipe could be replicated using mushroom, paneer and chicken as well, and is bound to give you that balanced rustic and spicy flavour.
