South Indian cuisine has introduced us to some of the most amazing snacks. It is one of those cuisines that never fails to amaze us with light and comforting delicacies. Not only some of the delicacies are utterly delicious but are also high on nutrition, which makes it an all-time favourite for most of us. Be it sambar, dosa, rasam or the lip-smacking chutneys, south Indian cuisine never fails to amaze us. Appams, are tiny crispy delights that are a popular treat amongst south Indian cuisine lovers. Sponge-like appams are often relished with sambar or coconut chutney and are simply the perfect snack for your evening binge.
Appes are traditionally made with left-over idli or dosa batter, and is also served during breakfast or with evening chai. Known by many diffrent names in different states of south India; like paddu, guliappa, gulittu, yeriyappa and gundponglu, appe can be made as nutritious and wholesome as you want. They are soft in the centre and crispy outside, and are traditionally made with rava and dal along with veggies and spices such as hing, curry leaves, ginger, green chilli and dry red chilli. You can always add in dals, spices and herbs of your choice to the batter and cook on an appe pan.
While most people simply add in carrots, you can experiment with more veggies too to make it all the more nutritious. And all it takes is about 30-45 minutes to cook this wholesome meal! Yes, you read that right. What’s more? You can have stuffed appe too. And now if you are thinking that it could be quite a long, messy affair in the kitchen, let us tell you how it is exactly NOT.
Making appe at home requires you to simply soak semolina overnight with curd, add veggies and salt, and pour the batter into appe moulds. Heat the moulds and let appe cook from both sides. Serve hot with coconut or garlic chutney.
