Soups are the best and healthy starters for meals. Light and loaded with nutrition, you can have a bowl of hot soup any time. Mixing up veggies, herbs and meat for soups is common, but hot and comforting chicken soups are a blessing. Whether you have a fever, or are coming down with cold or sore throat, a bowl of chicken soup is all you need to feel good for the day. It helps with heat and hydration needed for the body in ailments like flu. So, whether it's for your evening party or common cold, this chicken soup recipe will not disappoint.
Ingredients:
Small pieces of chicken- 100 gm
Water- 8 cups
Medium size onions- 2
Serrano chilli slices- 1
Chopped ginger- 1/2 cup
Sliced ginger- 4 slices
Oil- 2 tbsp
Garlic cloves- 6 (crushed)
Some coriander seeds
Some mustard seeds
Some cumin seeds
Chopped tomatoes- 1 cup
Salt
Directions:
1. Put chicken, water, and 1 tbsp salt in a large stockpot and boil. Then add onions, chopped ginger and garlic. Keep it at low flame for around half an hour.
2. Remove the breast from the chicken. Simmer it for 25-30 minutes.
3. Strain the soup through a sieve. Let the chicken cool then set aside the bones and slice it.
4.Put oil in a stockpot and heat for some time. Throw in the spices when heated and cook until it is fragrant. Add tomatoes. Keep stirring. Now put the reserved soup, ginger slices and chillies. Heat for 4-5 minutes. Add salt according to taste. Add chicken. Garnish with your favourite herbs and leaves.
