Nothing can replace the position of noodles from our taste buds. From kids to adults, it is the comfort food of many. Our favourite Chinese dish also comes in spectacular varieties. In India, there are diverse ways to make noodles. The most common type are chowmein and maggi. Ramen, soba, hakka and rice noodles also have a demand among Indians. These ‘strings of happiness’were introduced by Chinese and South East Asian traders many years ago but now, have become a popular treat in other parts of the world too.
But most of the time, these noodles are considered unhealthy as they are high in sodium and may increase the risk of high blood pressure which in turn can adversely affect kidney and heart health. On the other side, it is very difficult to resist the delicious taste of this flavourful Chinese delight. But what if eating noodles can control your blood sugar? Yes. You read it right. Including millet noodles in the diet can improve your health. These noodles are made with the most ancient cereal of the world i.e. millet, which is an excellent alternative to ‘maida’ noodles.
This gluten-free noodle has very few calories and is loaded with manganese, phosphorus, magnesium, zinc, fibre and antioxidants. Millet noodles have a lot of health benefits unlike other varieties. Some of them are:
1. Millet is low in calories and easily digestible, thus preventing fat accumulation. These factors not only make the noodles beneficial for diabetics but also good for weight loss.

Here is an easy recipe to make healthy millet noodles:
Ingredients:
- 180 gm millet noodles
- 3 pods garlic (thinly sliced)
- 2 onions
- 2 green chillies
- ½ cup cabbage
- 1 tsp green chilli sauce
- 1 tsp soy sauce
- 2 tsp tomato sauce
- ¼ tsp black pepper powder
- Salt to taste
- ¼ cup coriander leaves
- ½ cup green onions
Method:
- In a large pan, bring water to boil and add the noodles.
- Let it boil for five minutes or until done.
- Pour the noodles in a sieve and wash them under running water.
- Allow it to drain.
- In a pan heat oil and add garlic. Sauté for a minute and then add onions and green chillies.
- When the onions turn translucent, add cabbage and let them fry for a minute or two.
- Add in the sauces, salt and mix well.
- Add the drained noodles and mix gently so that noodles don’t break.
- Remove from flame and garnish with coriander leaves and green onions.
- Serve hot with tomato sauce.
