Classic Tomato Sauce

To make this sauce, first, saute chopped onions and garlic in olive oil till they are soft and aromatic. Then add the canned crushed tomatoes, salt, pepper, and herbs (oregano and basil) and mix thoroughly. Allow the mixture to simmer for 20 to 30 minutes. Once it has slightly thickened, use Usha's hand blender to puree the sauce until it's smooth, or leave it slightly lumpy for texture. This sauce pairs well with spaghetti or penne. For more flavours you also can add any veggies or proteins to this fresh tomato sauce.

Pesto Sauce

To prepare this, put the roasted pine nuts, Parmesan cheese, olive oil, fresh basil leaves, and garlic cloves in a bowl. Then blend the ingredients till they are smooth using Usha's hand blender. Also for extra flavour, you can also add spinach or nuts like almonds and walnuts to it. If you like your pesto creamier add additional olive oil depending on the thickness you like. It gives a herby flavour and freshness to any dish. It is paired well with pasta, but it may also be used as a vegetable dip or as a spread over sandwiches.

Marinara Sauce

It is similar to tomato sauce but typically simpler and has a slightly sweet and tangy flavour. To make this sauce in a saucepan, heat the olive oil, then add the minced garlic and saute it until aromatic. After that add the canned diced tomatoes, salt, pepper, red pepper flakes, and fresh basil leaves. Simmer the mixture for 15 to 20 minutes until it slightly thickens. Puree everything with the blender until it's smooth. This goes well as a breadstick dipping sauce, or as a base sauce for pizza or spaghetti.

Alfredo Sauce

At first heat a saucepan over low flame, then add heavy cream, butter, grated Parmesan cheese, and minced garlic. Stir continuously until the cheese melts and the sauce thickens. Roasted Red Pepper Sauce

This sauce has an orange-red colour and a smoky flavour which can enhance the taste of any pasta dish. To prepare this first, roast the red bell peppers in the oven until the skins are blackened. After cooling, remove the skins and use Usha's hand blender to puree the peppers with garlic, olive oil, and a little vinegar. You can add sun-dried tomatoes, feta cheese, or a little cream for more flavour depth. After blending, taste and adjust the salt and pepper. This colourful sauce goes well with rigatoni or penne and can be topped with parsley or other fresh herbs before serving.

Garlic And Herb Sauce

For making this sauce start by sauteing minced garlic in olive oil until aromatic and lightly brown. Then let it cool and add fresh herbs like parsley, basil, or thyme to it and by using the blender blend them until it's smooth. Additionally, you can add some shredded cheese for richness and a little bit of lemon juice. This sauce pairs well for spreading over roasted vegetables, dressing salads, and garnishing spaghetti and linguine.
