Deep-Fried Yoghurt Sweet Fritters To Eat With Coffee

While everybody enjoys biting into a crispy on the outside, fluffy on the inside doughnut, from time to time, making a batch of these deep-fried treats at home can be quite the task. Technically speaking, it is a lot healthier and cheaper to recreate your favourite fried food at home rather than get takeaway. That said, doughnuts rely heavily on time and technique and require plenty of attention when made from scratch. These yoghurt fritters, popularly known as Miske in Slovenia, literally translate as mice, due to their bite-sized appearance.

These yoghurt sweet fritters are in essence an easier and quicker way of making doughnuts, without having to wait to proof the dough or needing a bunch of cutters to shape the dough. They use only a handful of ingredients and have a sour tang to them, unlike a regular doughnut, which works well to contrast the sugary sweetness derived from the heaps of powdered sugar dusted on top, before serving. Here’s a recipe so you can make yourself a batch, to enjoy with your daily cup of coffee.

Ingredients

  • 300 grams fresh yoghurt
  • 300 grams all-purpose flour
  • 2 eggs
  • 4 tablespoons sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 2 teaspoons lemon zest
  • 500 ml il, for frying
  • ¼ cup powdered sugar

Method

  • Combine yoghurt, eggs, vanilla, sugar and lemon zest in a mixing bowl and mix everything well.
  • Sift the flour and baking powder into the wet mixture and whisk it in, until there are no lumps in the batter.
  • Heat the oil in a frying pan and use two spoons to make pellet-sized balls and drop them in gently in the hot oil.
  • Once they start to fluff up and turn golden brown, give them a minute on each side before turning over and removing on to a kitchen towel.
  • Dust plenty of powdered sugar on top of these fritters and serve hot with a cup of strong black coffee.
