The specialty of this ice-cream is that it will suit those on paleo and vegan diet. Additionally, if you are lactose intolerant, then this could be an ideal dessert that you can enjoy without getting tummy problems. This recipe can be churned up without any ice-cream maker which makes it an effortless dessert to prepare at home. So, without further ado here’s the recipe for silky coconut ice-cream.

Ingredients:

  • 3 ½ cups condensed coconut milk, refrigerated
  • ½ – 1 cup honey
  • 1 tbsp vanilla extract
  • Coconut, grated (garnish)
  • Pinch of salt

Preparations:

1. Place a loaf pan in the refrigerator for at least 24 hrs.

2. In a blender add milk, honey, salt and vanilla extract. Blend until the mixture is smooth and foamy. Make sure to add the solid parts of the coconut milk so that the ice-cream gets a good texture.

3. Pour the mixture into the chilled loaf pan and spread it evenly with a help of spatula.

4. Place the pan into the refrigerator and let it sit for 3-4 hrs. In the first 2 hours, remove the ice cream from the freezer and whisk it with a spatula to prevent formation of ice crystals.

5. Then leave it until it is frozen.

6. Lastly, garnish it with grated coconut.
