Christmas 2022: Make Easy Blueberry Cookies At Home

Blueberry cookies are sweet treats made with either dried, frozen, or fresh blueberries. To create blueberry cookies, simply start with sugar cookie dough or a chocolate chip cookie recipe and swap out the chocolate chips with blueberries. Oats, brown sugar, and any other things you think of when you think of a crumb muffin topping should be added to your blueberry cookie mixture to replicate the characteristics of a blueberry muffin. Use fresh berries or totally defrost your berries if you want to produce naturally purple cookies. The blueberries should be microwaved for a few seconds, mashed, and allowed to cool to room temperature before being included in the cookie batter. As an alternative, frozen berries assist the cookies to maintain a stronger shape while baking by preventing the cookie batter from becoming completely purple.

Ingredients:

 1 cup fresh blueberries

 2 ½ cups all-purpose flour

 1 pinch salt

 2 tsp baking powder

 2 eggs

 ½ tsp lemon extract

 ½ cup milk

 ½ cup butter

 1 cup white sugar

Method:

Set oven to 375 degrees Fahrenheit (190 degrees C). Butter a baking sheet.

Salt, baking powder, and flour are sifted together.

Cream butter or margarine and sugar in a sizable bowl. Add eggs and lemon seasoning after beating. Beginning with the milk, stir in the flour mixture in three separate additions. Add blueberries and combine gently.

Drop batter by tablespoons, spacing them 1 1/2 inches apart on the prepared sheets.

12 to 15 minutes for baking

Notes:

With more delectable fillings, you can't go wrong. Try adding rolled oats, slivered almonds, chopped pecans, or walnuts for a slightly nutty texture to make a heartier biscuit.

For a delicious version of this recipe, you can replace the blueberries with fresh strawberries, raspberries, or even cherries. These cookies would be fantastic in a mixed-berry variation as well.

The centres of your cookies should always be somewhat soft when you remove them from the oven. On the cooling rack, they will continue to cook for a few more minutes. This guarantees that you don't overbake them and that they always come out soft and chewy.
