Ingredients:

2 cups long-grain rice

1 onion, finely chopped

3 cloves of garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 scotch bonnet pepper (optional, for heat)

4 ripe tomatoes, blended or finely chopped

3 tablespoons of tomato paste

2 teaspoons of thyme

2 teaspoons of curry powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

3 cups of vegetable or chicken stock

2 tablespoons of vegetable oil

Salt to taste

Fresh cilantro or parsley for garnish (optional)

Instructions:

Rinse the rice thoroughly under cold water to remove excess starch. Set aside.
