One of the most popular dishes to come out of Gujarat is undoubtedly the Pan Handvo or handwa, a savoury pancake made in a pan, often with vegetables and nuts, and a delicious, spice-filled tempering. The batter is made from chana dal, urad dal, rice, curd, and water. Vegetables like peas, corn, and tomato can go in the batter. Also add to it onion, garlic, chilli, turmeric powder, ginger, sesame seeds, baking soda, and salt. The tempering on top will include mustard seeds, curry leaves, sesame seeds, red chilli, and asafoetida (hing).
Packed with dals, rice, and veggies, the dish is a complete meal, making one feel full and satisfied. It can be eaten with chutney or ketchup, or some curd. It can also be consumed as a tea-time snack in smaller quantities. It comes with the protein of dals and nutrients and the health benefits of vegetables and spices. However, rice means it has a high carbohydrate content and must be consumed with caution, especially by diabetics.
