A healthy appetizer for parties, zucchini dipped in parmesan and bread crumbs flavoured with black pepper and oregano.These fritters are unbelievably easy to make, low calorie, and the perfect way to sneak in some veggies!
STEP 1.Attach the slicer blade in the food processor and thinly slice 1 zucchini.
STEP 2.In a mixing bowl add 1/4 cup grated parmesan cheese, ½ cup bread crumbs and mix.
STEP 3.In another bowl add ¼ cup cornflour, 1 tsp black pepper powder and 1 tbsp dried oregano. Mix well and keep aside.
STEP 4.In a small bowl, whisk 1 egg.
STEP 5.Arrange the bowls and in the following order dip each slice of zucchini:
STEP 6.First in the cornflour mixture. Shake off excess flour.
STEP 7.Secondly in the whisked egg.
STEP 8.Thirdly in the breadcrumb and parmesan mixture.
STEP 9.On a preheated skillet, arrange the coated zucchini slices and drizzle a little oil over them. Fry on both sides until evenly cooked and crispy brown.
STEP 10. Serve zucchini fritter hot with tomato ketchup.
