This zucchini beef skillet recipe is the perfect way to use up your garden zucchini. It seems that every year my garden produces a ton of zucchini. This skillet meal is really good and makes 8-10 servings.

Ingredients for Zucchini Beef Skillet Recipe

  • 2-2.50 cup 2 medium zucchini unpeeled and chopped
  • 1 tablespoon Cooking oil
  • 1/2 tablespoon Bacon drippings optional
  • 1 Cloves of garlic peeled and chopped
  • 1/4 cup Diced green onions
  • 1/2 cup Chopped celery
  • 1/2 can Chicken
  • 1/2 can Tomatoes with green chilies
  • 1/2 can Black beans drained
  • 1/2 cup Fresh or frozen corn
  • 1/2 cup Long grain rice could use quick cooking rice
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Salt optional
  • 1/4 teaspoon Dried oregano
  • 1/2 teaspoon Dried cilantro leaves
  • 1/2 cup More or less shredded cheese i use monterey jack and cheddar
