This zucchini beef skillet recipe is the perfect way to use up your garden zucchini. It seems that every year my garden produces a ton of zucchini. This skillet meal is really good and makes 8-10 servings.
1/2 cup Long grain rice could use quick cooking rice
1/4 teaspoon Black pepper
1/2 teaspoon Salt optional
1/4 teaspoon Dried oregano
1/2 teaspoon Dried cilantro leaves
1/2 cup More or less shredded cheese i use monterey jack and cheddar
