STEP 1.1 in a bowl take rectangular brinjal pieces and add turmeric and salt to it.

STEP 3.3 heat some oil in a pan and fry the brinjal pieces till they turn golden brown.

STEP 4.4 soak some shallots in a bowl of water for 10 minutes and then cut them into half.

STEP 5.5 crush the mustard seeds and add vinegar, chilli powder and salt to it and mix well.

STEP 6.6 in a pan heat some coconut oil and add ginger, garlic, mustard paste. Stir it and cook on low flame.

STEP 7.7 add sugar and tamarind paste to this and mix well.

STEP 8.8 when this turns slightly thick add shallots, green chillies,turmeric powder, dried chillies and fried brinjal.

STEP 9.9 stir gently and simmer it for 5 minutes and your wambatu moju is ready to be served.
