The earthy flavor of the walnuts and the mild licorice flavor of fennel is a combination that’s hard to beat. That’s why I am obsessed with this delicious Walnut Fennel Soup. It’s loaded with other herbs and spices like thyme, garlic, and turmeric, so it’s one of the more unique soups I’ve ever made.

Ingredients for Walnut Fennel Golden Soup Recipe

  • 1/2 tbsp Oil
  • 1/2 tbsp chopped green part of spring onion
  • 1/4 tbsp grated fresh green turmeric
  • 1/4 tsp Mix herbs
  • 1/4 tsp Chilli flakes
  • 0.06 cup Peeled and chopped apple
  • 0.13 cup Chopped walnuts
  • 1/4 tbsp Crushed fennel seeds
  • 1/4 tsp Black pepper powder
  • 1/4 tsp Salt
  • 1 cup Vegetable stock

Directions: Walnut Fennel Golden Soup Recipe

  • STEP 1.Heat oil in a sauce pan, add mix herbs and chilli flakes and allow it to soften, then add green onions and cook on low heat for 2-3 minutes.
  • STEP 2.Now add fennel, turmeric and apple to it and mix well and keep stirring till it becomes soft. Now add walnuts and mix well and let it simmer for 2-3 minutes, then add vegetable stock to it, add salt and black pepper powder and mix well, cover and let it boil for 10-12 minutes.
  • STEP 3.Then let it cool. After cooling, blend it with a blender till it becomes very smooth.
  • STEP 4.Then boil it again on low heat for 4-5 minutes. Now serve it hot garnished with chili oil walnuts and coriander.
