Directions: Vegetable Pasties Recipe

Cooking Directions

  • STEP 1.Start by preparing the pastry dough. In a large bowl, combine flour, salt, and butter. Rub the butter into the flour until the mixture resembles breadcrumbs.
  • STEP 2.Gradually add cold water and mix until the dough comes together. Knead the dough lightly on a floured surface until smooth. Wrap it in plastic wrap and refrigerate for 30 minutes.
  • STEP 3.Meanwhile, prepare the vegetable filling. Heat oil in a pan and sauté onions until translucent. Add diced potatoes and carrots, and cook until slightly tender. Stir in peas, herbs, salt, and pepper. Cook for a few more minutes.
  • STEP 4.Preheat the oven to 200°C (400°F).
  • STEP 5.Roll out the pastry dough on a floured surface to a thickness of about 1/8 inch. Cut out circles using a round cutter.
  • STEP 6.Place a spoonful of the vegetable filling in the center of each pastry circle. Fold the dough over the filling to create a half-moon shape. Press the edges together to seal the pasties.
  • STEP 7.Transfer the pasties to a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden crust.
  • STEP 8.Bake in the preheated oven for 25-30 minutes, or until the pasties are golden brown and crispy.
  • STEP 9.Allow the pasties to cool slightly before serving. They can be enjoyed warm or at room temperature.
  • STEP 10.Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.

Cooking Tips

  • Make sure the butter for the pastry dough is cold and cut into small cubes for a flaky texture.
  • Feel free to add other vegetables like corn, bell peppers, or mushrooms to the filling for extra flavor and variety.
  • For a vegan version, use vegetable oil instead of butter and brush the pasties with plant-based milk instead of egg wash.
  • Serve the pasties with a side salad or steamed vegetables for a complete meal.

Storage and Serving

  • Serve the vegetable pasties warm as a main course or as an appetizer.
  • They can be enjoyed on their own or with a dipping sauce like chutney, ketchup, or salsa.
  • To store, allow the pasties to cool completely and then place them in an airtight container in the refrigerator.
  • Reheat in the oven at 180°C (350°F) for about 10 minutes or in the microwave for 1-2 minutes.
