Being an hyderabadi, biryani has always played a key role. No matter where we go, whom ever we meet, people always talk about dum biryani and irony of life is that, i never tasted it as we are vegetarians. Biryani has endless versions and methods of cooking. It has no fixed recipe. Flaky rice flavoured with paneer, vegetables, aromatic spices, powders and much more. Today i'm here sharing this vegetable dum biryani with you all that is close to my heart for all possible reasons one of which is that, its my mom's recipe. .

  • 1/2 no : cloves
  • inch An : cinnamon stick
  • 1/4 no : Bay leaf
  • 0.13 teaspoon Caraway seeds
  • 1/4 teaspoon Lemon juice
  • 0.13 teaspoon Salt
  • 1/2 cup For vegetable layer : : Mixed vegetables
  • 0.06 cup Bell pepper diced
  • 0.13 cup paneer cubes
  • 0.06 cup onions finely sliced
  • 1/4 small : tomato diced
  • 3/4 no : Green chilliest slit lengthwise
  • 0.06 cup mint finely chopped
  • 0.06 cup coriander finely chopped
  • 0.13 cup Brown/ fried onions
  • 1/4 tablespoon ginger garlic paste
  • 1/4 teaspoon cumin powder
  • 1/4 tablespoon coriander powder
  • 1/4 teaspoon Garam masala powder
  • 1/4 tablespoon Biryani masala
  • 0.13 teaspoon Sugar
  • 0.13 teaspoon Red chilli powder
  • As required Salt
  • 3/4 tablespoon Thick yogurt
  • 1/2 teaspoon Gram flour
  • 1/2 tablespoon ghee / Clarified butter
  • 1/2 tablespoon Oil
  • 1/2 tablespoon Milk
  • pinch saffron strands
  • 1/2 tablespoon Roasted cashews
