  • 1/2 pound Potatoes, we used red potatoes
  • 1/4 cup Chopped red onion
  • 1/4 cup Chopped red bell pepper
  • 1/4 cup Chopped vinegar pickles
  • 1/2 Handful of chives, chopped
  • 1/2 Handful of fresh parsley, chopped
  • 1/4 teaspoon Paprika
  • 1/4 cup Vegan mayo, we made our vegan aioli without the garlic, but you can also make our vegan mayonnaise
  • 1/2 tablespoon Classic mustard
  • 1/2 teaspoon Apple cider vinegar
  • 1/4 teaspoon Salt
  • 0.06 teaspoon Ground black pepper
