Cooking Directions

  • STEP 1.Grate the courgettes and squeeze out any excess moisture.
  • STEP 2.In a large bowl, combine the grated courgettes, chickpea flour, onion, garlic, cumin, coriander, salt, and pepper. Mix well to form a thick batter.
  • STEP 3.Heat a non-stick frying pan over medium heat and add a drizzle of olive oil.
  • STEP 4.Drop spoonfuls of the courgette batter onto the pan and flatten them slightly with the back of a spoon.
