Cooking Directions

  • STEP 1.Wash and soak a mixture of lentils (such as split yellow lentils, split Bengal gram, and broken wheat) for a few hours.
  • STEP 2.In a large pot, add the soaked lentils, chopped vegetables (such as carrots, beans, and potatoes), and water. Cook on low heat until the lentils and vegetables are soft and well-cooked.
  • STEP 3.Using a hand blender or a masher, blend the cooked lentils and vegetables to a smooth consistency. Add more water if needed to achieve the desired thickness.
  • STEP 4.In a separate pan, heat oil or ghee and add chopped onions, ginger-garlic paste, and spices like cumin, coriander, turmeric, and red chili powder. Cook until the onions are golden brown and the spices are fragrant.
  • STEP 5.Add the cooked lentil and vegetable mixture to the pan and mix well with the spices. Cook for another 10-15 minutes, stirring occasionally.
  • STEP 6.Garnish with chopped coriander leaves, fried onions, and a squeeze of lemon juice before serving.
  • STEP 7.Vegetable Haleem can be served hot with naan or rice. It can also be stored in the refrigerator for a few days and reheated before serving.
