0.06 nos cup spring onions – green part finely chopped
1/4 nos tbsp spring onions – white part finely chopped
1/4 nos tbsp garlic finely chopped
1/4 nos tsp Soya sauce
1/2 nos tsp peeper powder
3/4 nos Tbsp oil
As required salt to taste
As required Water as needed
Directions: Veg Fried Rice Recipe
STEP 1.Soak 1 cup basmati rice in water for 15 mins.
STEP 2.Set aside undisturbed. Soaking helps in giving grain seperated and also soft fluffy rice.
STEP 3.Rinse it well until starch water is washed off. Drain water completely.
STEP 4.To a sauce pan add 4 cups water bring it a boil add required salt.
STEP 5.Add drained rice to it.
STEP 6.Give a quick mix and cook in low medium flame for 6-8 mins.
STEP 7.Rice should be aldente soft but should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.
STEP 8.Transfer to a colander drain water completely.
STEP 9.Spread it over a plate to cool down. Set aside.
STEP 10.Now to a wok – add 2 tbsp oil – add 1 tbsp garlic finely chopped and 1 tbsp spring onion white part.
STEP 11.Saute for a minute.
STEP 12.Add 1/2 cup carrot finely chopped, 1/2 cup capsicum, 3/4 cup cabbage shredded and 1/4 cup beans thinly sliced.
STEP 13.Saute for 2 mins in high flame, keep stirring until the veggies start to shrink.
STEP 14.Add salt to taste, 1 tsp vinegar,1 tsp soya sauce and 1 tsp pepper powder.
STEP 15.Give a quick stir.
STEP 16.Add cooked rice.
STEP 17.Add 1/2 tsp crushed pepper, 1/4 cup spring onion green part.
STEP 18.Give a quick mix. Toss the rice in high flame for 2 mins and switch off.
STEP 19.Tasty Veg Fried Rice is ready!
