The street food from Mumbai, vada pav is Indian style vegetarian potato burger. The dish is made with deep-fried potato dumplings sandwiched between pav bread and accompanied with spicy garlic and green chutney.
STEP 2.Dry roast garlic and whole red chili. Into the same pan dry roast peanuts. coconut and sesame seeds as well.
STEP 3.Cool and coarse grind to make the chutney powder.
STEP 4.Make Batata vada
STEP 5.Heat oil in a pan, add asafoetida, cumin, and mustard seeds. Saute for 1 minute.
STEP 6.Add ginger, curry leaves, and green chilies. Now add mashed potatoes and mix well.
STEP 7.Add chopped coriander leaves and set aside to cool.
STEP 8.Make medium sized balls from it, Keep covered and aside.
STEP 9.Take all ingredients for the batter in a bowl. Slowly add water and mix carefully to avoid lumps. The batter should be thick enough.
STEP 10.Heat oil in a wok. Dip each potato balls in batter and fry in oil till golden and crispy from both sides. Drain on a paper towel and set aside.
STEP 11.Into the same oil fry green chilies as well.
STEP 12.Assembling:
STEP 13.Take pav buns and slit them in halves, n toast in butter , then apply garlic chutney on one side n another side green chutney Place the vada in the center along with fried green chilli and serve immediately.
