It is a popular south Indian dish that you can eat any time during the day, Usually made with idli or dosai batter; can add suji (samolina )to the batter; I have added veggies, spices, herbs etc to make it more nutritious and tasty
STEP 1.Whisk together semolina., Spice powders, yogurt and idli batter. Add the vegetables, curry leaves and coriander leaves The batter should not be watery or lumpy. Add baking soda and salt, stir and rest for 30 minutes
STEP 2.Place a kadai over medium heat. Grease with a tbs oil. Pour 1 cup of batter and spread with a spoon to make a circle. Pour 1 tablespoon of oil evenly over the top and cover with a lid
STEP 3. After cooking for 4 or 5 minutes, you can smell the aroma of cooked uthappam. Turn and cover for 3 minutes,
STEP 4.It may take 5-6 minutes to make a uthappam. . Cooking time depends on the stove and the size of the uthappam.
STEP 5.You can make approximately 10 uthappams. It is soft and spongy. Serve with chutney, pickles or veggie masala curry.
