STEP 1.Wash & soak urad Dal,fenugreek seeds & enough water in a deep bowl & mix well.Cover with a lid & keep aside to soak for 4 hrs.
STEP 2.Wash & soak par-boiled rice,raw rice & thick beaten rice & enough water in a deep bowl & mix well.Cover with lid & keep aside to soak for 4 hrs.
STEP 3.Drain urad Dal & fenugreek seeds & blend in a mixer to a smooth paste using approx. 1 cup of water.Transfer the mixture into a deep bowl & keep aside.
STEP 4.Drain the par-boiled rice,raw rice & thick beaten rice & blend in a mixture To a smooth paste using approx. 1 cup of Water.Transfer the mixture into the same bowl of urad Dal batter,add salt & mix well.
STEP 5.Cover with a lid & keep aside to ferment in a warm place for 12 hrs.
STEP 6.Once fermented,mix it very well.
STEP 7.Just before serving,hear a non-stick Tava,sprinkle a little water on the tava & wipe it off gently using a muslin cloth.
STEP 8.Pour 1 1/2 Ladleful of batter on It & spread on a circular motion to make a 225 mm. Diameter thin circle.
STEP 9.Smear a little ghee over it & along the edges & cook on a medium flame till the dosa turns golden brown in colour & crisp.
STEP 10.Fold over to make a semi- circle or a Roll.
STEP 11.Repeat with the remaining batter to make 19 more dosas.
STEP 12.Serve immediately with coconut chutney,sambhar & malgapodi.
