I truly believe that spag bol is australias unspoken national dish. Apart from a sunday lamb roast, i dont believe theres a dish around that brings more of a smile to faces than spaghetti bolognese. I fondly remember my mum (and im not of italian heritage) teaching me how to cook this when i was about 8 years old in the 70s. We werent well off, and this was an easy staple. Mum would often drag out the cooking process of the bol over 2 days, and im sure she enjoyed watching us writhe in anticipation of the meal to come. Mum would often cook it on top of the old pot belly stove during winter, to cut back on electricity and used a large cast iron pot. Like italy, everyone has their own version of the bol.
