Undhiyu is a famous gujarati dish which is made using mixed vegetables and fenugreek (methi) dumplings in an aromatic blend of spices. The original Undhiyu takes hours to make. But here is a faster way to make Undhiyu in pressure cooker with less oil which gives same taste and aroma.

  • As Required For muthiya
  • 50 g ms Methi or Fenugreek Leaves chopped
  • 0.33 Cup Mixed Flour (Bajra
  • 0.33 Tsp Turmeric Powder
  • 1/2 Tsp Red Chilli Powder
  • 0.33 Tsp Dhania Jeera Powder
  • To Taste Salt
  • 0.33 Tsp Sugar
  • 0.17 Tsp Oil
  • A Pinch Pinch baking soda
  • As Required Water
  • As Required Oil for frying Muthiya
  • As Required For Masala
  • 0.33 Cup Grated Fresh Coconut
  • 0.17 Cup Spring garlic chopped
  • 0.67 Pieces reen chillies
  • 0.33 Inch Ginger chopped
  • 0.08 Cup Chopped Fresh Green Coriander Leaves
  • 0.67 Tsp Lemon Juice
  • As Required Water
  • 0.33 Cup Methi or Fenugreek Leaves chopped
  • 0.17 Tsp Turmeric Powder
  • 0.33 Tsp Red Chilli Powder
  • 0.33 Tsp Dhania Jeera Powder
  • 0.33 Tsp Garam Masala
  • To Taste Salt
  • 0.17 Tsp Sugar
  • As Required Other Ingredients
  • 33.33 g ms Surti Papdi or Vaal
  • 1.33 Pieces Small Brinjals
  • 1.67 Pieces Baby Potatoes
  • 0.67 Pieces Sweet Potatoes
  • 0.33 Pieces small piece Purple Yam (Ratalu)
  • 1 Pieces Raw Bananas
  • 4 Pieces Ivy Gourds or Tindora
  • 0.67 Tsp Oil
  • 0.33 Tbsp Ajwain
  • 1 Tbsp Sesame Seeds
  • A Pinch Pinch hing
  • 0.67 Tsp Water
  • To Taste Salt
  • 0.33 Tsp Sugar
  • 0.17 Tsp Red Chilli Powder
  • 0.17 Tsp Turmeric Powder
  • 0.17 Tsp Garam Masala

Directions: Undhiyu !! Recipe

  • STEP 1.Muthiya - Mix all ingredients listed for muthiya in a mixing bowl except oil for frying. Gently make muthiya's and deep fry them and keep aside. Alternatively you can bake muthiyas in microwave for few minutes.
  • STEP 2.Masala - In a mixer grinder jar, take freshly grated coconut, spring garlic, green chillies, a small piece of ginger, coriander, lemon juice. Make a paste adding little water if required. In a mixing bowl take finely chopped methi. Add this paste to it. Add haldi, red chilli powder, dhania jeera powder, garam masala, salt, sugar. Mix all well. Masala for Undhiyu is ready.
  • STEP 3.Cut and keep aside all the vegetables. Cut bananas in big pieces. Stuff brinjals and bananas with masala. Add all the vegetables except muthiyas to masala. Mix all well.
  • STEP 4.In a big pressure cooker, heat oil. Add ajwain and pinch of hing. Saute for few seconds. Add vegetables mixed with masala. Mix well. Take very little water. Add salt, sugar, turmeric powder, red chilli powder, garam masala to water and mix well. Add this water to vegetables and give it a good mix. Pressure cook for 2 whistles.
  • STEP 5.Then in a broad pan heat oil. Add ajwain and sesame seeds. Once it crackles, add cooked Undhiyu in pressure cooker and mix all well. Add prepared muthiyas and again mix well and cook for 1-2 minutes.
  • STEP 6.Garnish with spring garlic and serve hot with Roti.
