  • STEP 1.Peel and chop the raw mango into small pieces.
  • STEP 2.Soak tamarind in water and extract the juice.
  • STEP 3.In a pan, heat oil and add mustard seeds, urad dal, and red chili. Once they splutter, add curry leaves and neem flowers.
  • STEP 4.Add the chopped mango, tamarind juice, jaggery, and salt. Cook until the mango is soft and the flavors are well combined.
  • STEP 5.Remove from heat and let it cool. Serve chilled as a side dish with rice or as a condiment with snacks.
  • STEP 6.Store the Ugadi Pachadi in an airtight container in the refrigerator for up to 3-4 days.
