STEP 1.1 fill a saucepan with water, add 500 gm pork belly cut into thick 1 inch slices and boil for 30 minutes. Then remove, drain and keep aside to cool.

STEP 2.2 when the pork is cool, cut into thin slices.

STEP 3.3 heat 2 tbsp oil in a wok, add 4 thinly sliced cloves of garlic, 20 gm finely chopped ginger, ½ tsp ground red pepper and stir fry for a few seconds.

STEP 4.4 add the pork slices, 2 spring onions cut into 3 cm pieces and stor fry for 2 minutes.

STEP 5.5 add 1 green and 1 red pepper cut into 1/2 cm slices, 1 tbsp light soy sauce and stir fry for 1 minute.

STEP 6.6 add 1 tbsp yellow bean sauce, 1 tsp chili flakes, 20 ml stock and stir fry for 1 minute.

STEP 7.7 add salt to taste, stir well and serve hot.
