Cooking Directions

  • STEP 1.In a large pot, heat olive oil over medium heat. Add onions and garlic, and cook until onions are translucent.
  • STEP 2.Add ground turkey to the pot and cook until browned, breaking it up with a spoon.
  • STEP 3.Stir in the chili powder, cumin, smoked paprika, and oregano. Cook for a minute to toast the spices.
  • STEP 4.Add the diced sweet potatoes, diced tomatoes, tomato paste, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
  • STEP 5.Stir in the black beans and corn, and cook for an additional 5 minutes.
