Tsampa is a sweet dish made from roasted rice that is ground to a powder and served with sugar and butter as a dessert or a snack. It is a Tibetan and Himalayan staple foodstuff, particularly prominent in the central part of the region.
STEP 1.Wash 250 gms rice thoroughly and spread it out on a cloth to dry completely.

STEP 2.1 in a hot pan dry roast 250 gms rice. Stir continuously so that the rice does not burn. Roast till the rice turns opaque, crunchy and off white in colour. Do not let it brown.

STEP 1.Immediately take rice out of the pan and spread it out to cool. When cooled, pound the rice to an almost fine texture. Store in airtight container.

STEP 3.4 serve a few tbsp of this powdered roasted rice in a bowl with sugar and butter as desired. Mix well and enjoy.
