Pasta All'amatriciana is a very classic Italian pasta dish that goes back years and years.This classic Roman pasta dish is quick and easy to make with few ingredients. Traditionally, guanciale is used, but I prefer pancetta.
Ingredients for Traditional Spaghetti All'Amatriciana Recipe
400 gram spaghetti or bucatini
150 gram Guanciale
150 gram pecorino romano
400 gram peeled tomatoes
1 glass white wine
1 peperoncino
1 garlic clove
1 small onion
3 tablespoon olive oil
1 tablespoon Salt
1 teaspoon freshly ground pepper
As required fresh basil for decoration

STEP 1.Cut guanciale into small cubes.

STEP 2.In a large pan, add the olive oil and on medium heat let the gianciale melt its fat.

STEP 3.Once the fat has melted and the gianciale becomes crispy, add the peperoncino, garlic, and onion.

STEP 4.Fry for 2 minutes, then add the white wine.

STEP 5.At this point, add water to a pot, salt and start cooking the water so that we can cook the spaghetti in the boiling water.

STEP 6.Once the wine is reduced by 50%, add the tomatoes, and break them with a spatula or a spoon.

STEP 7.Cook spaghetti according to package instructions.

STEP 8.Once spaghetti is al-dente, add the spaghetti to the matriciana sauce pan.

STEP 9.If you need more liquid, take the spaghetti water.

STEP 10.Last, add the pecorino cheese and mix.
