Ingredients for Tori (Ridge gourd) Malaikari Recipe

  • 62.50 g Tori (Ridge gourd)
  • 1/4 cup Onion chopped
  • 1.25 g arlic cloves
  • 1/4 inch Ginger
  • 2.50 pieces Blanched Almonds (skinless)
  • 2.50 pieces Blanched Cashews
  • 2.50 pieces Blanched Raisins
  • 1/2 tbsp Blanched Melon seeds
  • 1/4 tbsp Khas khas (poppy seeds) soaked
  • 0.06 cup Smooth pain Curd
  • 1/4 tsp Caraway seeds
  • 1/4 inch Cinnamon stick
  • 1 pieces Green cardamoms
  • 3/4 pieces Cloves
  • 1/2 pieces Bay leaves
  • 1/4 tbsp Coriander powder
  • 1/4 tsp White pepper powder
  • 0.13 tsp Kababchini powder
  • a pinch Nutmeg powder
  • a pinch Mace powder
  • as required Red chilli powder
  • 0.13 tsp Green cardamom powder
  • as required water
  • 3/4 tbsp Ghee
  • to taste Salt
  • 1/4 tbsp Sugar
  • 1/4 tbsp Fresh cream

Directions: Tori (ridge Gourd) Malaikari Recipe

  • STEP 1.Boil onion pieces for 3 min, cool completely Grind boiled onion with blanched Cashews, Raisins, Almonds, melon seeds & Khas khas into smooth puree.
  • STEP 2.Wash & peel off Tori, cut into long pieces. Heat 1 tbsp of ghee in a pan fry Tori pieces on high heat for 2-3 min. Keep aside.
  • STEP 3.Heat 2 tbsp of ghee in same pan add caraway seeds, cinnamon stick, Cardamoms, cloves & bay leaves, let it crackle. Add grated Garlic & ginger fry for a min. Now add prepared puree stir continuously on medium flame until ghee separate from masalas. Add smooth Curd, fried Tori pieces, coriander powder, red chilli powder, nutmeg powder, mace powder, white pepper powder, kababchini powder & cook for 2-3 min. Adjust salt & sugar. Add hot water as required for adjust consistency of the gravy. Bring to a boil & cover & cook for 5 min. On low flame.
  • STEP 4.Finally sprinkle Green Cardamom powder.
  • STEP 5.Serve into a serving plate and garnish with some fresh cream on top. Enjoy with tandoori roti, Nun, Pulao.
