Tonkotsu ramen is an excellent introduction to japanese noodle soups. Deeply flavoured tonkotsu pork broth, ramen noodles and chashu pork belly come together to create comfort in a bowl.

  • 3 ounce Good quality dried ramen noodles
  • 1 Large or extra large eggs
  • 1/2-3/4 ounce Enoki or other mushrooms
  • As required Thinly Sliced Green Onions
  • 1/2 pound Pork belly rolled and tied
  • 0.06 cup Soy sauce
  • 0.13 cup Sake
  • 0.13 cup Mirin sweet japanese wine
  • 0.06 cup Sugar
  • 1/2-3/4 Cloves garlic left whole
  • 1/2 Green onions coarsely chopped
  • 1/2 Slices bacon use good quality bacon here
  • 0.06 cup Soy sauce
  • 1/2 tablespoon Mirin
  • 1/2 tablespoon Sake
  • 1 tablespoon Shiro miso
  • 0.13 cup Shiro miso
  • 0.06 cup Sake
  • 0.06 cup Mirin
  • pinch Shichimi Togarashi
