Directions: Tomato Rice Recipe
STEP 1.Heat some vegetable oil in a pot over medium heat. Once hot, Saute the onions until they are light and translucent.
STEP 2.Add in ginger-garlic paste and saute for few seconds.
STEP 3.Then add in the diced potatoes and give it a nice stir, cook for 5 minutes.
STEP 4.Add all the spices stir and combine well.
STEP 5.Take the roughly chopped tomatoes and to a blender and blend to make puree.
STEP 6.Also make vegetable stock by boiling some carrot, onion and green peas with salt,pepper and 1 cup of water.
STEP 7.Add Tomato puree and vegetable stock to the pot with potatoes. Season it with salt and sugar and bring it to boil.
STEP 8.Also add in shredded purple cabbage.Its just optional to use cabbage, you can omit it or can use other vegetables like peas, carrot etc.
STEP 9.Then add the rice, give a good stir and bring to boil again.
STEP 10.Turn the heat down to medium-low, cover and let it simmer until rice cooks completely.
STEP 11.Before removing, fluff the rice with a spatula.
STEP 12.Remove from heat and let it stand for 10 minutes.
STEP 13.Serve this one pot rice dish warm with cucumber raita and pan seared cherry tomatoes.
