STEP 1.In a large mixing bowl add 2 cups of all purpose flour and water a little at a a time and mix together till dough comes together.
STEP 2.Then knead the dough till it is smooth and soft. Roll the dough into a ball and apply a little oil all over the surface and keep it in the bowl.
STEP 3.Cover the bowl and leave it to rest for 20 minutes.
STEP 4.After 20 minutes, grease palms and rolling pin with oil and roll out the dough into a large sheet.
STEP 5.Using a knife, cut broad lengthwise strips of the dough and then cut the strip into half. Pick up half a strip and pull gently to make the strip thin. Hold one end of the strip and hold the center of the strip and gently pull to stretch.Repeat with the other end. Step-6)As the strip gets longer and thinner like a ribbon, rest half the length over the wrist of one arm, while using your hands to stretch the noodle. The thinner the noodle ,the more delicious. Break pieces of this thin flat noodle and add it to the stock when ready.
STEP 6.For the vegetables stock, add 2 tbsp oil in a deep pan, add 1 thinly sliced onion and fry till the onion is golden brown. Add ½ tsp salt.
STEP 7.Add1 chopped tomato and fry till the tomato is soft.
STEP 8.Then add 3 cups of water and bring it to a boil. At this stage add 1 sliced potato and let the stock boil till the potatoes are cooked.
STEP 9.Next add the pieces of bok choy stem and the pieces of handmade noodles into the vegetable stock.
STEP 10.When adding the noodles to the stock, turn the heat to low and add the noodles quickly as they cook very fast.
STEP 11.Then add the bok choy leaves, ½ tsp soy sauce and ¼ tsp sesame oil (optional).
STEP 12.Vegetable thenthuk is ready.

STEP 1.Any additional vegetables can be used as well.
