A sweet crunchy snack of deep fried dough dusted with sugar powder. It is prepared from minimum ingredients all purpose flour, milk, sugar, water and oil.
STEP 1.In a saucepan add 1 cup milk, 1 cup water, ½ cup oil, 1 cup sugar. Bring to a boil and stir continuously till sugar melts. Turn off the what and keep aside to cool

STEP 1.In a grinding jar add ½ cup granulated sugar and grind to a fine powder. Keep aside.

STEP 1.In a mixing bowl add 700 gm all purpose flour (maida). Make well in the centre andad the sugar water. Mix slowly and begin to knead to form a dough.

STEP 1.Dust a flat surface with flour and knead to form a firm dough. Once the dough is formed continue to knead for 5 to 6 minutes.

STEP 1.Brush the dough with oil. Place it in a zip lock bag and let it rest for 1 hour.

STEP 1.After one hour, portion the dough into large balls.

STEP 1.On a flat surface dusted with flour roll out each ball to make a thin circle. Cut the circle into broad ribbons/ strips. Cut each strip diagonally to get diamond shape pieces of dough.

STEP 1.Make a slit in the centre of each diamond, and fold the top point of the diamond into the slit and bring it out on the other side. Make this pattern with the rest of the dough.

STEP 1.In a kadai or a deep pan heat oil for deep frying. When the oil is hot, slide the pieces of dough into the pan and fry them on medium to high heat till they are cooked through and turn golden brown.

STEP 1.Remove from the oil and drain on a kitchen paper towel or even newspaper.

STEP 1.Spoon some ground sugar powder into a strainer and tap it over the fried khapse to have a dusting of sugar on them.
