STEP 1.In a large bowl, combine the buttermilk and chicken pieces. Let them marinate in the refrigerator for at least 30 minutes, or longer if you have the time.
STEP 2.In a separate bowl, combine the potato starch (or cornstarch), salt, black pepper, paprika, and garlic powder.
STEP 3.Take the marinated chicken pieces, allowing any excess buttermilk to drip off. Coat them evenly with the starch mixture and place them on the prepared baking sheet.
STEP 4.Lightly spray the coated chicken with cooking spray to help achieve a crispy texture in the oven.
