  • 1 Carrots, Thinly Sliced
  • 1/2 Juice Lime
  • As required Salt And Pepper To Taste

Cooking Directions

  • STEP 1.In a large pot, heat oil over medium heat. Add garlic, ginger, and lemongrass and sauté for 2 minutes.
  • STEP 2.Add vegetable broth, coconut milk, and soy sauce. Bring to a boil and simmer for 10 minutes.
  • STEP 3.Add tofu, mushrooms, bell pepper, and carrots. Cook for another 5 minutes or until vegetables are tender.
  • STEP 4.Stir in lime juice and season with salt and pepper. Remove from heat.
