Thai Asparagus And Lemon Grass Brown Rice Recipe

My husband loves thai food so i like to try to find easy thai recipes for him. These recipes come from thai: the essence of asian cooking by becky johnson. The meat pictured is thai ribbons, a recipe that i posted a while ago. It should be in the archive. The veggie is broccoli stems b/c i didnt have asparagus, but we really liked it. Well have to try it with the asparagus. I put our changes in parenthesis. The broccoli was on the spicy side, but you can omit the red pepper if you dont like it spicy. The rice had a really nice homey flavor and wasnt spicy at all. It made a nice balance between the spicyness of the veggie and meat. Let us know how the thai asparagus and lemon grass brown rice turn out.

  • 1/4 stalk Lemon grass 1 tablespoon fresh lemon grass herb blend
  • 1/4 cup Rice brown long grain
  • 1/4 tablespoon Olive oil
  • 1/4 Onion Chopped
  • 1/4 inch Ginger fresh root, peeled and finely chopped
  • 0.38 teaspoon Coriander seeds
  • 0.38 teaspoon Cumin seeds
  • 3/4 cup Vegetable stock chicken stock
  • 1 tablespoon Cilantro chopped fresh
  • As required Spring onions and coconut strips to garnish omitted
  • As required Lime wedges to serve
  • 3 ounce Asparagus stalks broccoli stems with the thick outer layer removed
  • 1/2 tablespoon Vegetable oil peanut oil
  • 1/4 Clove garlic crushed
  • 1/4 tablespoon Sesame Seeds Toasted
  • 1/4 piece Galangal fresh, freshly shredded
  • 1/4 Red chili fresh, seeded and finely chopped
  • 1/4 tablespoon Fish sauce thai
  • 1/4 tablespoon Soy sauce light
  • 3/4 tablespoon Water
