Thai Chicken Peanut Lettuce Tacos Recipe

Not your ordinary tacos – these thai chicken lettuce tacos are spicy and exotic, made with my light peanut sauce which i make with pb2 (powdered peanut butter) sriracha, ginger and spices. To balance out the spice, i chose to serve these in crisp cool lettuce wraps but tortillas would work great too!.

  • 3/4 tablespoon PB2, or 2 tbsp peanut butter
  • 0.13 tablespoon Sriracha chili sauce
  • 1/4 tablespoon honey
  • 1/4 tablespoon soy sauce, use Tamari for gluten free
  • 0.13 tablespoon freshly grated ginger
  • 1/4 clove garlic, crushed
  • As required cooking spray
  • 4 ounce ground chicken
  • 1/4 As required tbsp Sriracha chili sauce, more or less
  • 1 cloves garlic, crushed
  • 1/4 tablespoon fresh ginger, grated
  • 1/4 tablespoon soy sauce, use Tamari for gluten free
  • 0.19 cup shredded carrots
  • 0.17 cup scallions, chopped
  • 0.19 cup shredded red cabbage
  • 1/2 tablespoon chopped peanuts
  • As required cilantro leaves, for garnish
  • 1 Lime wedges
  • 2 iceberg lettuces outer leaves
