Keep aside. in a mixing bowl add 2 tbsp cornflour, 2 tbsp soya sauce, 3 tbsp Chinese red chilli sauce, ½ cup tomato puree, 2 tbsp tomato ketchup, and 1 cup water. Mix together well to get a smooth mixture.

step 2

  • STEP 1.In a preheated pan add 2 tbsp oil, the steamed cauliflower, and salt to taste. Roast the cauliflower on medium-high heat for about 5 minutes, tossing occasionally till it gets brown spots and becomes slightly crispy.

step 3

  • STEP 1.To cook the sauce, heat a saucepan and add 1 tbsp oil, 2-inch pieces of ginger finely chopped, 6 cloves of garlic finely chopped, 2 green chillies finely chopped, 2 spring onion bulbs finely chopped, 1 capsicum thinly sliced. Saute on high heat for 1 to 2 minutes. Do not cook it too much. The capsicum needs to be firm.

  • STEP 1.Return the cauliflower pan to heat and pout in the cooked sauce. Stir it on high heat and mix well to ensure that the cauliflower gets well coated with the sauce and absorbs the flavours. Bring to a brisk boil for 3 to 4 minutes and turn off the heat. Lastly, sprinkle chopped spring onion greens.
