Ingredients for Tamatar Aloo without onion and garlic Recipe

  • 1 nos medium potato
  • As required Boiled
  • 1/2 nos medium tomato
  • 3/4 tbsp Ghee (clarified butter)
  • As required ¼ tsp Asafoetida (Hing)
  • 1/2 nos bay leaf
  • As required ½ tsp cumin seeds
  • 1/2 nos dry red chilli
  • As required ½ tsp turmeric powder
  • 1/4 tsp Kasuri methi
  • 1/4 tsp ¼ Kashmiri Chilli Powder
  • 1/4 tsp Ginger
  • As required Grated
  • 1/4 tsp ¼Coriander Powder
  • As required ½ tsp cumin powder
  • As required ½ tsp Garam masala powder
  • 1/2 tbsp Coriander leaves
  • As required ½ tsp Sugar
  • As required Salt to taste
  • 1/2 cups Water

Directions: Tamatar Aloo Without Onion And Garlic Recipe

  • STEP 1.Take a blender and make a puree of tomatoes.
  • STEP 2.Heat ghee in a pan or kadhai on medium heat. Add hing, bay leaf, cumin seeds and ginger paste. Sauté it for a few seconds.
  • STEP 3.Add Kashmiri red chilli powder and mix it well.
  • STEP 4.Add tomato puree, coriander powder, turmeric powder, cumin powder, garam masala powder and salt. Mix well and cook till ghee starts separating from tomatoes. It will take around 7-8 minutes. Keep stirring to avoid burning.
  • STEP 5.Meanwhile, break the potatoes with your hands into pieces.
  • STEP 6.Once the ghee separates from the tomatoes, add 2 cups of water. Let it come to a boil, then turn the flame to medium.
  • STEP 7.Add potato pieces and sugar to the tomato and spices curry. Let it simmer for 4-5 minutes. Adjust the consistency and seasoning.
  • STEP 8.Add coriander leaves and mix them well. Switch off the flame.
  • STEP 9.Tamatar aloo is ready to serve.
  • STEP 10.NOTES: 1. Use Boiled And Completely Cooled Potatoes For This Recipe. If You Add Hot Boiled Potatoes, They Will Become Mushy And Won’t Give The Curry The Right Texture. 2. Instead Of Homemade Tomato Puree, You Can Use Store-Bought Tomato Puree (1 Cup For This Recipe). 3. Sugar Is Optional; You Can Omit It.
