Sweet Potato Gnocchi Recipe

Pillowy and flavored with the subtle earthy sweetness of roasted sweet potato, these sweet potato gnocchi are incredibly versatile dumplings that pair well with a simple coating of herby browned butter or a creamy garlic sauce. Traditional gnocchi are typically made with white potatoes, but by using sweet potatoes, you get the unique flavor as well as the bright orange color of the root vegetable. To make, mix the sweet potato into ricotta cheese and parmesan cheese. The ricotta gives the gnocchi their characteristic fluffy texture and milky flavor, while the parmesan adds a rich saltiness that helps to balance the natural sweetness of the potato. Once this mix is seasoned with salt and pepper, carefully stir in flour. You'll need a a sticky dough that is generously coated before being shaped and cut into dumpling pieces.
