  • STEP 1.Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • STEP 2.Peel and dice the sweet potatoes into bite-sized cubes.
  • STEP 3.In a bowl, toss the sweet potato cubes with olive oil, salt, and spices like cumin, paprika, and chaat masala.
  • STEP 4.Spread the seasoned sweet potatoes on the baking sheet and roast them in the preheated oven for about 25-30 minutes, or until they are crispy and golden brown.
  • STEP 5.While the sweet potatoes are roasting, prepare the tamarind chutney by mixing tamarind paste, jaggery or brown sugar, water, and spices like cumin and red chili powder in a saucepan. Cook it on low heat until it thickens.
