As long as you have some Sooji/Rawa / Semolina on hand, there's no end to the number of recipes you can create! Like this one.. this is very light and digestible recipe so as u can try after evey festival or occasion.
Ingredients for Suji ke gulgule (Steam suji Idli) Recipe
1/4 tbsp Ghee
1/4 tsp Mustard seeds
As Required ½ cup water /coconut milk(optional)
As Required ½ tsp Sugar
to taste Salt
A Pinch ¼ tsp turmeric powder
1/4 cup Semolina
A Few Drops Little water
to taste Salt
1/2 tbsp curd beaten
As Required For boiling
as required water
As Required ½ tsp Sugar
to taste Salt
1/4 tsp Ghee
As Required Prepared Sooji Gulgule
As Required For Tempering
1/4 tbsp Ghee
1/4 tsp Gota urad dal
1/4 tsp Chana dal
As Required ½ tsp cumin seeds
As Required ½ tsp mustard seeds
1/4 inch ginger chopped
sprig 2 Curry leaves
1/2 Pieces dry Red chillies chopped
1/2 g green chillies (chopped)
1/4 tbsp Peanut
a pinch Of turmeric powder
As Required Prepared Sooji Gulgule
As Required Little water
to taste Salt

A Few Few coriander leaves
As Required For Ganishing Fresh mint leaves, finely chopped
As Required ½ tsp lemon juice
As Required For Ganishing For garnish

Directions: Suji Ke Gulgule (steam Suji Idli) Recipe
STEP 1.Process:-
STEP 2.For Sooji Ke Gulgule
STEP 3.In a kadai, add ghee once it’s hot, add mustard seeds and let it splutter well.
STEP 4.Add water or coconut milk, sugar, salt to taste, turmeric powder and mix well.
STEP 5.Add semolina and mix everything properly and continue cooking until soft dough or it comes together.
STEP 6.Add a little water, salt to taste, curd and mix it well until it completely absorbs its water.
STEP 7.Once done transfer it into a bowl and knead it properly.
STEP 8.In a parat, place the prepared mixture and knead it properly.
STEP 9.Pinch a lemon size ball and flatten it slightly, press in the center to give a shape and keep aside for further use.
STEP 10.For Boiling
STEP 11.In a large kadai, add water on medium flames, Add sugar, salt to taste, ghee and mix it well.
STEP 12.Keep the flame on simmer and let it boil for a few seconds. Add prepared sooji ke gulgule and let it get cooked for 2 to 3 minutes.
STEP 13.Once gulgule gets cooked well switch off the flame and transfer into the parat.
STEP 14.Keep in the refrigerator for 2 to 3 minutes. Once it holds the shape, remove it out and keep aside for further use.
STEP 15.For Tempering
STEP 16.In a large kadai or wok, add ghee once it’s hot, add gota urad dal, chana dal and saute it until light golden in color.
STEP 17.Add cumin seeds, mustard seeds and let it splutter well.
STEP 18.Add ginger, curry leaves and saute well. Add dry red chillies, green chillies, peanuts and toss everything well.
STEP 19.Add a pinch of turmeric powder, prepare sooji ke gulgule, sprinkle little water, salt to taste, and sugar, and toss everything well.
STEP 20.Now, add coriander leaves, mint leaves, lemon juice and toss everything well.
STEP 21.Transfer it into a serving dish. Garnish it with fresh coconut bits, lemon wedge, coriander sprig and serve hot.
